Open a race shop/restaurant called “Because Racecar.” The race shop side of things would be a multi-discipline race shop, offering top level equipment and experts to teams who can’t afford such people and equipment on their own. Hopefully the cross-pollination between disciplines would produce new ideas and tricks in competitors’ native disciplines, and interest (and possibly even ventures) into other fields of motorsport. The shop would include a machine shop, an engine and a chassis dyno, a lounge/office/game room, etc.
On the restaurant side, things will of course be motorsports themed (though tasteful enough that people just looking for a good meal could still be comfortable). Racing decor, TV’s showing races from around the world (if there’s any way to show it legally, free or otherwise, cable or internet, then we’ll show it), and one or two rooms which will be used for major races where fans can watch and be loud without disturbing the rest of the restaurant. Patrons can vote on what races they want to be shown in the events room. Additionally, there will be viewing windows where restaurant patrons can see what’s going on in parts of the race shop.
Ideally there would be a test track/proving grounds facility behind the shop, but let’s not be greedy.

Someone could make a killing if they opened a vintage road racing/motorcycle racing coffee joint in some hipster-y region, like the PNW, and called it Cafe Racer...

Mine would be to hire DustyVentures to help me turn a bunch of old, bankrupt rural golf courses into rally schools or dune buggy courses. Srsly, this is a dream of mine, but way too obscure and capital-intensive. Never mind the noise pollution. But the land is already cleared and the hills and turns are mostly in place — for 18 holes x 400 yards average = just over 4 miles. Plenty of space if the cars are timed right.

I like it. I was once at Buffalo Wild Wings as GRC coverage came on. Got about 5 minutes of watching before they switched it to baseball. Maybe this could be located at a track with outdoor seating trackside.

Also you should collect out of spec/crashed racing seats to use as your chairs. You could stick a plaque on the back of the seats that were crashed noting who crashed it, where, and how.
It would be like Hard Rock Cafe but racecars.
